"Fried' Chicken

Can't say it's really fried chicken when it's cooked on the SmokeFire. We'll call it breaded and tasty. Cooked with cherry pellets.

Ha ha. OK.

2 cups Flour
3-4 tbs baking powder

2 tbs from this rub:
2 tbs Kosher salt
2 tbs coarse black pepper
1 tbs garlic powder
1/2 tbs paprika
1/2 tbs chili powder
1/2 tbs cayenne pepper

Bath:
1 cup Milk
1 tbs vinegar
2 eggs

Toss chicken in the flour mixture, dip in the bath and back into the flour mixture. Put on the grill at 400* for 20 minutes. Spray with cooking spray, flip and spray the other side. Cook 15 minutes. Flip again and cook another 15 minutes. That's it.
 
That chicken looks awesome. Will definitely being making over labor day weekend.
