Set it for 600, got to 340 after 10-15 minutes now it’s at 335. What a PITA!! I may just fire up a kettle for the first time in months.

Looks great Bruno! Sometimes I feel leaving the lid open an extra amount of time actually helps get to temp faster. Enjoy!
