I would like thicker but I buy 1/4 cows and they don't give me the option. You have to buy a 1/2 or whole cow to get a custom cut list. I'll just have to suffer with 1" steaks :)

Before you return it, try removing the heat deflectors over the burn pot and watching it. See if you can narrow it down to a glow plug issue, or over-dumping of pellets. Also verify the installation as some people have experienced this issue from a burn pot that was not quite installed right. A...
Agree. Spoke to a couple of farms over the past year and processing times around here is the biggest factor. Seems like there are so few who can do it and they have to be certified processors. Besides, where are you going to hunt for cow? :geek:
Will do. Tomorrow will be a porterhouse - can't go wrong with that. Something I might try in the future is sous vide one of my chuck roasts and reverse sear it. Just saw a video on it and man that looked good. He says it's better than ribeye.
Sucks you are having those issues. Seems like there are a few lemons out there where it just keeps on giving problems. Mine has been rock solid (after doing all the upgrades) knock on wood.
