    I would like thicker but I buy 1/4 cows and they don't give me the option. You have to buy a 1/2 or whole cow to get a custom cut list. I'll just have to suffer with 1" steaks :)

    Ps clean your ash tray every cook. That's the minimum maintenance you need to do. You need air flow.

    Agree. Spoke to a couple of farms over the past year and processing times around here is the biggest factor. Seems like there are so few who can do it and they have to be certified processors. Besides, where are you going to hunt for cow? :geek:

    Will do. Tomorrow will be a porterhouse - can't go wrong with that. Something I might try in the future is sous vide one of my chuck roasts and reverse sear it. Just saw a video on it and man that looked good. He says it's better than ribeye.
