Since the temp it shows for the air is run through some processing before display, some software glitch seems likely - some sort of rounding error giving the 1 degree off thing. And the 600 temp staying and not fluctuating? I suspect they are just showing 600 regardless and running the grill...
I did 10 shoulders at one time on my EX6. They all finished at different times. The grill handled it better than I did. It took a while for it to get to temp with all that cold mass in there.
Hijack alert: where do the felt strips go? One came out of the ash/grease drawer but Weber couldn’t identify it from my photo and now the piece is missing. This is it on the top of a food safe bucket lid.
Just here to say I did that for my last pork shoulder and it was enthusiastically received.
